(Easy) Leng Mian (Cold Noodle)

This is a traditional Shanghainese dish which I find highly attractive and easy to make. If you want a quicky and want it to go with any vegtables, this will do =)

Ingredients:
1 serving of noodles (I recommend spaghetti noodles)
1 tablespoon Teriyaki Sauce
2 tablespoons peanut butter
2 teaspoons Chili oil

Directions:

Boil the noodles until the noodles are soft. Pour the noodles into a strainer and let them cool. You may speed the cooling by running cold water through the noodles. Get rid of the excess water when the noodles are cool and put them on a plate.

Microwave the peanut butter for 30 seconds so it’s liquified. Mix it with the noodles. Then add the Teriyaki sauce and the chili oil. Mix well.

There is your Leng Mian. I’d recommend it with some fried spinach or any other green veggie.
